Preheat the oven to 350F. Grease an individual sized cake tin.
Beat sugar, oil, vanilla, and eggs in a bowl with an electric mixer until light and fluffy. Combine flour, baking soda, cinnamon, and salt; stir into batter just until blended. Fold in apples using a spatula. Pour into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 35 minutes to 50 minutes. Allow cake to cool in pan for about 15 minutes then invert on to a wire rack.
For the Glaze
Heat butter, milk, and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring to dissolve sugar, then remove from the heat. Drizzle over warm cake.
