Ingredients
Apple Harvest Cake
  • 2cups white sugar
  • 1 1/2cups vegetable oil
  • 2teaspoons vanilla extract
  • 3 eggs
  • 3cups all purpose flour
  • 1teaspoon baking soda
  • 1/2teaspoon ground cinnamon
  • 1teaspoon Salt
  • 2 granny smith applespeeled, cored and chopped
Caramel Glaze
  • 1/2cup butter
  • 2teaspoons milk
  • 1/2cup brown sugar
Instructions
For the Cake
  1. Preheat the oven to 350F. Grease an individual sized cake tin.
  2. Beat sugar, oil, vanilla, and eggs in a bowl with an electric mixer until light and fluffy. Combine flour, baking soda, cinnamon, and salt; stir into batter just until blended. Fold in apples using a spatula. Pour into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 35 minutes to 50 minutes. Allow cake to cool in pan for about 15 minutes then invert on to a wire rack.
For the Glaze
  1. Heat butter, milk, and brown sugar in a small saucepan over medium heat. Bring to a boil, stirring to dissolve sugar, then remove from the heat. Drizzle over warm cake.
