Apple Pie Egg Rolls with Apple Brown Sugar Syrup

Ingredients
For the Filling
  • 2 Tablespoons Butter
  • 3 small appleschopped small
  • 4-6tablespoons brown sugar
  • 1teaspoon cinnamon
  • Pinch salt
  • 24 egg roll wrappers
  • ¼cup vegetable oilfor frying
  • 2tablespoons powdered sugarfor dusting
For the Syrup
  • 2tablespoons butter
  • 3/4cup water
  • 1/4cup apple juice
  • 1cup brown sugar
  • 1teaspoon cinnamon
  • 1/2teaspoon nutmeg
Instructions
Making the Filling
  1. Melt the butter in a small saucepan over medium low heat. Add the apples, brown sugar, cinnamon, and salt. Stir until well combined then continue to cook for 1-2 minutes. Remove from heat.
Making the Egg Rolls
  1. Lay the egg roll wrapper out like a diamond. Place about 2 tablespoons of the mixture in the middle of the egg roll just a little higher than the midpoint of the wrapper, using your finger or small brush to spread some water along the edges. Fold the bottom up and over the mixture. From here, fold in the two side corners and roll until closed. Use more water to fully close and seal all edges.
Frying the Egg Rolls
  1. In a nonstick pan, cover the bottom of pan in oil and heat up to medium-high heat. Fry eggrolls on all sides until golden brown. Lay fried eggrolls on a paper-towel lined plastic tray and allow to cool.
Making the Syrup
  1. Using the same pan the filling was made in, whisk water, apple juice and brown sugar together in a nonstick pan. Heat mixture on medium heat until it starts to boil.
  2. Turn the heat down to low and whisk in the butter as well as the spices.
  3. Put back on medium heat until it boils again. Let cool and allow to thicken more before serving.
To Serve
  1. Serve the warm apple egg rolls with syrup and sprinkle with powdered sugar.
