Melt half the butter over medium high heat in a large skillet. Add the pork and cook until slightly browned. Remove from pan and set aside.
How to Make Apple Mixture
Using the same skillet, melt the remaining butter. Add the apple slices and allow to cook until soft, about 5 minutes. Add in the apple mixture and the cream. Stir to combine. Bring to a light boil.
Add the pork back in and make sure all the pork is coated, continue to let cook. Stir mixture occasionally so nothing stick to the bottom of the pan.
Once everything is fully cooked, serve hot with the apple mixture spooned over the pork.
How to Make the Root Vegetable Mash
Add chopped vegetables to a large pot with water along with the whole garlic cloves. Cover with lid and bring to boil. Boil until very soft. Drain in colander and let sit to steam out, then transfer back to pot.
Mash vegetables in pot. Add all other ingredients and stir over medium-low heat for a few minutes until incorporated. If mixture appears too thin increase to medium heat so that mixture starts to bubble. Stir constantly (to prevent sticking to bottom of pot) for a few minutes until mixture thickens and resembles mashed potatoes.
Let cool slightly and season with salt and pepper to taste and serve.
