Ingredients
Apple Spice Cupcakes
  • 2cups all purpose flour
  • 1teaspoon baking soda
  • teaspoon ½baking powder
  • 2teaspoon cinnamon
  • teaspoon ½ground cloves
  • teaspoon ½ground nutmeg
  • teaspoon ½salt
  • cup ½vegetable oil
  • 1cup brown sugar
  • 2 eggs
  • 2teaspoon vanilla extract
  • cup ¾apple juice
  • 1 granny smith appleshredded
Cream Cheese Frosting
  • cup ½buttersoftened
  • 8ounces cream cheesesoftened
  • 1teaspoon vanilla extract
  • teaspoon ¼salt
  • 4cups powdered sugar
Instructions
  1. Preheat oven to 350ºF and line a 12-cup muffin tin with liners, set aside.
  2. In a bowl combine flour, baking powder, baking soda, cinnamon, cloves, nutmeg and salt. In the bowl of an electric mixer cream together oil and sugar until fluffy.
  3. Add the eggs and vanilla until well combined and the eggs are fully incorporated.
  4. Alternate adding the flour mixture and the apple cider until well combined.
  5. Fold in the shredded apple until evenly distributed
  6. Fill muffin cups and bake. For mini cupcakes bake for about 12 minutes. For full size cupcakes bake for 18-20 minutes. Remove from the oven and cool completely before frosting.
Cream Cheese Frosting
  1. Combine butter and cream cheese in the bowl of a stand mixer (or you may use an electric mixer) and beat until creamy, well-combined, and lump-free.
  2. Add vanilla extract and salt and stir well to combine.
  3. With mixer on low, gradually add powdered sugar until completely combined.
