Instructions
To Make the Beef
  1. Create beef marinade
  2. Make the sauce by mixing baking soda, hoisin sauce, soy sauce, water, cornstarch, white pepper, sugar, and cooking wine.
  3. Add the beef to the marinade and massage to have the meat fully covered with the marinade. Set aside and let it sit.
Create sauce
  1. In a small bowl, mix the hoisin sauce, soy sauce, water, cooking wine, sugar, cornstarch, and white pepper.
Boil broccoli
  1. Boil the broccoli with a little bit of oil and salt and cook it to your preference. Drain once cooked.
Cook beef
  1. Add some cooking oil into the marinated beef and mix until all the meat is lightly coated in oil.
  2. Heat up the skillet to medium-high then add cooking oil. Swirl the cooking oil around the wok to fully coat the bottom and sides. Pour out the excess oil.
  3. Slowly lower the heat and put in the meat. Cook the beef for around 30-60 seconds, or when it turns brown.
  4. Flip the beef and cook it for 60-90 seconds or until it’s mostly brown.
  5. Once mostly cooked, turn off the heat and take the meat out from the wok. Set aside.
Stir-fry vegetables & beef
  1. Add the remaining oil and stir-fry the sides.
  2. Add the garlic and ginger first and fry for 20-30 seconds. Put in the green onion and carrot slices and cook for another 20-30 seconds. Once cooked, add the broccoli. Cook for another 30-40 seconds.
  3. Add back the beef. Cook everything together for 30-45 seconds.
  4. Because the broccoli absorbs a lot of liquid, you can add extra water to the sauce if needed.
  5. Add the sauce to the stir-fry and constantly mix for about 1 minute. Add sesame oil. Once everything is incorporated, add a little more leftover oil to coat the broccoli. Taste to adjust the flavors and plate once it’s to your taste!
Making the Noodles
  1. In a large pot of boiling water, cook ramen according to package, about 3-4 minutes; drain well.
  2. In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, chili sauce and water.
  3. Heat sesame oil in a large skillet set over medium heat.
  4. Stir in garlic and ginger until fragrant, about 1 minute.
  5. Pour in the bowl of sauce and simmer for 3-4 minutes. Stir in cooked ramen noodles until heated through and evenly coated in sauce, about 3 minutes.
  6. Garnish with green onions and sesame seeds.
To Serve
  1. Serve broccoli beef on a bed of noodles. Enjoy!
