Jerk Pork Sliders with Mango Slaw

Ingredients
  • 4 Hawaiian Rollshalved
For the Pork Burgers
  • 1pound ground pork
  • 1tablespoon paprika
  • 1tablespoon Salt
  • 2tablespoons garlic powder
  • 2tablespoons black pepper
  • 2tablespoons onion powder
  • 2tablespoons dried oregano
  • 1tablespoon dried thyme
  • 2 green onionsfinely chopped, divided
  • 1/4cup panko breadcrumbs
For the Mango Slaw
  • 1/4cup mayonnaise
  • 1tablespoon rice vinegar
  • 1 mangopeeled and julienned
  • 1head green cabbagefinely shredded
  • 1 carrotjulienned
  • 1/2teaspoon Salt
  • 1/4teaspoon black pepper
Instructions
For the Patties
  1. Preheat a pan to medium high. Mix the pork, spices, ½ the scallions, and the panko in a bowl, season with salt and pepper. Form into 1-inch-thick balls and flatten into tiny sliders.
  2. Brush the pan with vegetable oil. Grill the patties until browned and cooked through, 4 to 5 minutes per side.
For the Slaw
  1. In a large bowl, combine mayonnaise, rice vinegar, mango, cabbage, carrot, and the remaining green onion. Season with salt and pepper and toss to coat.
To Serve
  1. Add the cabbage on the bottom part of the roll, place a patty on top and top with other half of the roll.
