Ingredients
Pineapple BBQ sauce
  • 1/2cup BBQ sauce
  • 1cup pineapple juice
  • 3/4cup brown sugarpacked
  • 1/2teaspoon garlic powder
  • 1/2teaspoon onion powder
  • 2tablespoons Worcestershire sauce
  • 3/4cup ketchup
Fried Rice
  • 2tablespoons butter
  • 1/2 oniondiced
  • 2 garlic clovesminced
  • 1teaspoon gingerminced
  • 1/4teaspoon white pepper
  • 1/2teaspoon Salt
  • 3cups cooked rice
  • 2tablespoon vegetable oil
  • 2tablespoons soy sauce
  • 1/2cup shredded coconut
  • 2 green onionsthinly sliced
  • 1/2can pineapplesmall dice
  • 6 eggsscrambled
Meatballs
  • 1/2cup panko style breadcrumbs
  • 1 eggbeaten
  • 1tablespoon onion powder
  • 2teaspoons garlic powder
  • 1teaspoon chili powder
  • 1/2teaspoon Salt
  • 1/2teaspoon ground pepper
  • 1 ½pounds lean ground beef
  • 1/2teaspoon Salt
  • 1/2teaspoon fresh ground pepper
  • 1 1/2pounds lean ground beef
Instructions
How to Make the BBQ Sauce
  1. Combine remaining ingredients except in small pot. Bring the sauce to gentle boil, lower heat to a simmer. Add the slurry, cover and let it simmer to thicken. Turn heat off and set aside.
How to Make the Meatballs
  1. Combine all the ingredients in a large mixing bowl and mix thoroughly. Then form into 1 ½ inch size meatballs.
  2. In a pan with vegetable oil over medium heat, brown meatballs on each side. Transfer the meatballs into the pan with the BBQ sauce and bring the mixture to a boil. Lower heat to medium low and let it simmer to cook for 10-15 minutes, covered.
How to Make Fried Rice
  1. Preheat a large pan over medium heat. Add the butter and once melted add the garlic, onions, and ginger until fragrant and the onions are translucent. Add oil to the pan. Then add in the rice, salt, pepper toss it until its fully coated with the oil.
  2. Once rice is fully coated, crack eggs into the pan and scramble into rice.
  3. Add in the shredded coconut, pineapple, soy sauce, and green onions. Toss to combine. Adjust seasoning if needed. Turn heat off.
How to Serve
  1. Serve Meatballs over a bed of Rice.
