Meatloaf Meatballs with Mashed Potatoes

Ingredients
Meatballs
  • 2pounds ground beef
  • 1/4 yellow onionminced
  • 2cloves garlicminced
  • 2tablespoon Worcestershire sauce
  • 2 eggs
  • 3/4cup breadcrumbs
  • 1teaspoon Salt
  • 1/2teaspoon black pepper
Meatloaf Glaze
  • 1/3cup ketchup
  • 3tablespoons brown sugar
  • 1tablespoon yellow mustard
  • 1tablespoon Worcestershire sauce
Mashed Potatoes
  • 2 russet potatopeeled and diced
  • 3/4teaspoon Saltdivided
  • 1/2teaspoon white pepperdivided
  • 1/4cup milk
  • 1tablespoon butter
Instructions
Making the Mashed Potatoes
  1. Peel potatoes and cut them into large pieces, place in a pot with water and cover with lid. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
Making the Meatballs
  1. In a large bowl mix the ground beef, onion, garlic, Worcestershire sauce, eggs, breadcrumbs, salt, and pepper until just combined.
  2. Roll mixture into meatballs and place onto a baking sheet.
  3. In an oiled nonstick heated to medium heat, cook meatballs on all sides until fully cooked through.
Finishing the Mashed Potatoes
  1. Drain potatoes, mash with milk, butter, and the remaining salt and pepper. Serve with meat mixture.
Making the Glaze and Finishing the Meatballs
  1. Combine all ingredients into a bowl. Whisk to combine.
  2. Once meatballs are cooked, turn the heat down to low and add in the glaze making sure that all the meatballs are coated.
