Ingredients
For the Impossible Beef
  • 1/2pound impossible ground beef
  • 2tablespoons olive oil
  • 2teaspoons paprika
  • 1teaspoon dried thyme
  • 1teaspoon onion powder
  • 1/2teaspoon cumin
  • 1/4teaspoon smoked paprika
  • 1/4teaspoon Salt
  • Dash black pepper
  • 1/4cup water
For the Pitacos
  • 1tablespoon olive oil
  • 1/2cup canned corn kernelsdrained
  • 1cup canned red kidney beansdrained
  • 1/4cup crumbled feta cheese
  • 4 Pita Bread
Instructions
  1. Heat a large pan over high heat and when it’s hot enough add the impossible beef and the olive oil. Cook the beef stirring often with a spatula, breaking up any lumps, until it is browned, and all the juices have evaporated (about 10 minutes). Add the spices and stir for 1 more minute, then add the water and cook for another minute until it’s evaporated. Transfer the mixture to a plate.
  2. Reduce heat to medium/high and in the same pan add the olive oil and corn. Cook about 2 minutes and then add the cooked impossible beef and the beans. Cook for 2 more minutes and turn off the heat. Add half of the cheese and mix.
  3. Divide the filling to the pitas. Top with the cheese and enjoy!
