Ingredients
Chocolate Crust
  • 2cups Oreo crumbs
  • cup ¼brown sugar
  • 2tablespoons buttermelted and more if needed
  • 1teaspoon cinnamon
Brownie Batter
  • 3/4cup vegetable oil
  • 1cup white sugar
  • 1teaspoon vanilla extract
  • 2 eggs
  • 1/2cup all purpose flour
  • 1/2cup cocoa powder
  • 1/4teaspoon Salt
  • 2teaspoon cinnamon
Cheesecake Batter
  • 8-ounce cream cheesesoftened
  • 1 egg
  • 1/3cup white sugar
  • 1/4cup all purpose flour
  • 1/2cup canned pumpkin puree
  • 1teaspoon vanilla extract
  • 1/2teaspoon cinnamon
  • 1teaspoon pumpkin spice
Instructions
  1. Preheat your oven to 350ºF. Spray a square baking pan with cooking oil then line it with parchment paper.
For the Crust
  1. Combine cookie crumbs, brown sugar, melted butter, and cinnamon in a medium bowl; firmly press mixture evenly onto the bottom of the prepped pan and 1 inch up the sides. Bake in the preheated oven for 10 minutes; set aside.
For the Brownie Batter
  1. In the bowl of your mixer add oil, sugar, vanilla extract and mix well until well combined. Add the eggs and continue beating until light and fluffy.
  2. Add the dry ingredients for the brownie batter, then mix into the butter mixture until well combined and smooth.
For the Cheesecake Batter
  1. In a large bowl, add the cream cheese and beat it until smooth. Add the rest of the cheesecake batter ingredients and mix until well combined and smooth.
For Assembly
  1. Spread about ⅔ of the chocolate batter into the prepared pan and smooth it out with a spatula. Spread the cheesecake batter over the brownie batter. Add the remaining brownie batter over cheesecake batter by the spoonful. Swirl the batters together by skewer back and forth through the pan.
  2. Place the baking pan in the oven and bake for 40 to 50 minutes, or until center is set. Cool completely on wire rack and chill before cutting and serving.
