Sheet Pan Chicken Gyros with Feta Tzatziki Sauce

Ingredients
For the Chicken
  • 1 1/2 pounds chicken thighssliced
  • 8 garlic clovesminced
  • 1tablespoon onion powder
  • 1tablespoon smoked paprika
  • 1tablespoon cumin
  • 1tablespoon dried oregano
  • 2teaspoons chili powder
  • 1/2teaspoon cayenne pepper
  • 1/4 lemonzested
  • 1/2teaspoon Salt
  • 1/4teaspoon black pepper
  • 2tablespoons olive oil
For the Tzatziki
  • 1 Cucumberfinely chopped
  • 1cup Greek yogurt
  • 1tablespoon lemon juice
  • 1teaspoon olive oil
  • 1 garlic cloveminced
  • 1/4teaspoon Salt
  • 1bunch dillchopped
  • 1/2cup crumbled feta cheese
To Assemble
  • 6 Pita Bread
  • 1head romaine lettucechopped
  • 1 red onionthinly sliced
Instructions
  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
For the Chicken
  1. In a bowl, toss together all the chicken ingredients. Allow to marinate for at least 10 minutes.
  2. When ready, place on the sheet pan and bake for 10 to 12 minutes.
For the Tzatziki
  1. Once the cucumber is cut, place on a towel and gently squeeze out a bit of the excess water.
  2. In a bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and dill.
To Assemble
  1. Spread some tzatziki sauce on the pitas and then stuff with chicken, romaine, and onion. Drizzle with more tzatziki and enjoy!
