Spam Musubi with Pineapple Salad

Ingredients
Spam Musubi
  • 1teaspoon soy sauce
  • 1teaspoon brown sugar
  • 1/8teaspoon mirin
  • 1/2 teaspoon vegetable oil
  • 1/2slice canned Spamthin
  • 2sheets noricut into thirds crosswise
  • 1/2teaspoon furikake
  • 1/2cup short grain ricecooked
For the Salad
  • 1/3cup canned pineapple chunks
  • 1/3 Cucumberhalf moons
  • 1/4 red onionthinly sliced
  • 1/4 red bell pepperdiced
  • 2sprigas Fresh cilantrochopped
For the Salad Dressing
  • 1teaspoon lime juice
  • 1tablespoon olive oil
  • 2tablespoons honey
  • 1teaspoon apple cider vinegar
  • 1teaspoon Salt
  • 1teaspoon black pepper
Instructions
For the Spam Musubi
  1. Cut the spam lengthwise into 4 slices, to desired thickness.
  2. In a small bowl whisk the soy sauce, sugar, and mirin. Set aside.
  3. Lightly coat the bottom of the large pan with oil and heat over medium. Cook until spam slices are browned and crispy on each side. Turn off the heat to avoid burning, add the soy sauce mixture. Turn over the spam slices until evenly coated in the sauce. Transfer the spam slices onto a lined clear tray.
  4. Place a piece of plastic wrap on your work surface. Grab a piece of nori and place on the plastic such that the rough side is facing up.
  5. Mold rice into a 1-inch-thick rectangle the same shape as the Spam. Place rice onto the nori, sprinkle with furikake, then top with a slice of spam. Wrap nori around rice, sealing the edges with a small amount of water.
For the Salad
  1. Add lime juice, olive oil, honey, vinegar, salt, and pepper to a small bowl and immersion blend to incorporate.
  2. In a large mixing bowl, add pineapple, cucumber, red onion, bell pepper, and cilantro. Pour dressing over the salad and toss until the blend is covered with the vinaigrette. Refrigerate until ready to serve.
