Tofu Nuggets over Veggie Chow Fun

Ingredients
  • 2tablespoons vegetable oilfor cooking
Tofu Nuggets
  • 1inch package tofucut into squares, 1/2thick
Veggie Chow Sauce
  • 1teaspoon Salt
  • 1 ½tablespoons hot water
  • 1/2teaspoon sugar
  • 2tablespoons soy sauce
  • 2tablespoons hoisin sauce
  • 1tablespoon sesame oil
  • 1/2teaspoon white pepper
Veggie Chow Fun
  • ¼cup vegetable oil
  • 1-inch fresh gingermined
  • 2cloves garlicminced
  • 3 green onionsgreen and white parts separated
  • 1cup mushroomsslied
  • 1cup snow peascut in half
  • 1-pound wide rice noodles
  • 1tablespoon mirin
  • 1 ½cups bean sprouts
  • 1-pound wide rice noodles

  • 1head bok choyroughly chopped
Instructions
How to Make the Noodles
  1. Bring a pot of water to a boil. Add rice noodles and cook 2-3 minutes or until el dente. Drain and set aside.
How to Make the Sauce
  1. In a small bowl, combine the salt, sugar, hot water. Whisk until the sugar and is dissolved. Then add the soy sauce, oyster sauce, sesame oil and white pepper. Set aside.
How to Cook the Tofu
  1. Heat a non-stick skillet with oil over medium heat. Once oil is hot, place tofu in pan. Cook on each side for 2-3 minutes, or until it is golden brown and crispy. Add in half the sauce. Combine, and cook until sauce thickens.
How to Make Veggie Chow Fun
  1. Heat a large skillet over medium high heat and add the vegetable oil. Once oil is heated, add the ginger. Let the ginger fry to 10 seconds to infuse the oil; then stir in the garlic and the white portions of the green onions. Next, add the mushrooms and snow peas. Stir fry for another minute.
  2. Turn heat up to high. Add the rice noodles and mirin. Allow the noodles to fry on high heat for 30 to 60 seconds; then pour the rest of the sauce mixture over the noodles. Continue gently stir-frying the noodles using a scooping motion for 2 minutes. Make sure you scrape the bottom of the wok with your spatula to prevent the noodles from sticking. The high heat of the wok should also prevent the noodles from sticking.
  3. Add the bean sprouts and remaining green onions. Continue stir-frying until the noodles are heated through and the snow peas turn a bright green.
How to Serve
  1. Serve Chow Fun with the Tofu Nuggets on top. Enjoy!
