Ingredients
Ube Cake
  • 1 nonstick cooking sprayfor greasing
  • 1cup all purpose flour
  • 1teaspoon ½baking powder
  • teaspoon ¼salt
  • 5 eggs
  • 1cup white sugardivided
  • 1teaspoon ube extract
  • 2 drops purple food dye
  • 1/3cup milk
Tres Leches Syrup
  • 1-12ounce canned evaporated milk
  • 1-9ounce canned sweetened condensed milk
  • 1/3cup heavy cream
Frosting
  • 2cups heavy cream
  • 2tablespoons white sugar
Instructions
To Make the Ube Cake
  1. Preheat the oven to 350°F and grease a square baking pan. Set up three mixing bowls.
  2. In a large bowl, sift together flour, baking powder, and salt. Separate egg whites and yolks into the other two bowls.
  3. Beat egg yolks with ¾ cup sugar with an electric mixer on high speed, until yolks are a pale yellow. Stir in the milk and ube extract.
  4. Beat egg whites on high speed until soft peaks form. With the mixer on, pour in ¼ cup sugar and beat on high speed until egg whites are stiff but not dry, about 1 minute.
  5. Pour egg yolk mixture over the flour mixture and combine gently with a spatula.
  6. Gently fold in egg white mixture with the spatula until just combined. Pour batter into prepared pan, even out the surface, then bake for 30-35 minutes or until a toothpick comes out clean.
To make the Tres Leches Syrup
  1. In a bowl with a pouring lip, combine heavy cream, evaporated milk, and condensed milk. When the cake is cool, pierce the surface all over with a fork then slowly drizzle the milk mixture over the cake.
To Make the Frosting
  1. Pour cold heavy whipping cream and sugar into a large mixing bowl. Using an electric mixer, beat on high speed for 1 ½ to 2 minutes or until thick, whipped and spreadable. Spread over the cake with a spatula, then slice and enjoy!
