- 1 teaspoon soy sauce
- 1 teaspoon brown sugar
- 1/8 teaspoon mirin
- 1/2 teaspoon vegetable oil
- 1/2 slice canned Spam thin
- 2 sheets nori cut into thirds crosswise
- 1/2 teaspoon furikake
- 1/2 cup short grain rice cooked
- 1/3 cup canned pineapple chunks
- 1/3 Cucumber half moons
- 1/4 red onion thinly sliced
- 1/4 red bell pepper diced
- 2 sprigas Fresh cilantro chopped
- 1 teaspoon lime juice
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 teaspoon apple cider vinegar
- 1 teaspoon Salt
- 1 teaspoon black pepper

- Cut the spam lengthwise into 4 slices, to desired thickness.
- In a small bowl whisk the soy sauce, sugar, and mirin. Set aside.
- Lightly coat the bottom of the large pan with oil and heat over medium. Cook until spam slices are browned and crispy on each side. Turn off the heat to avoid burning, add the soy sauce mixture. Turn over the spam slices until evenly coated in the sauce. Transfer the spam slices onto a lined clear tray.
- Place a piece of plastic wrap on your work surface. Grab a piece of nori and place on the plastic such that the rough side is facing up.
- Mold rice into a 1-inch-thick rectangle the same shape as the Spam. Place rice onto the nori, sprinkle with furikake, then top with a slice of spam. Wrap nori around rice, sealing the edges with a small amount of water.
- Add lime juice, olive oil, honey, vinegar, salt, and pepper to a small bowl and immersion blend to incorporate.
- In a large mixing bowl, add pineapple, cucumber, red onion, bell pepper, and cilantro. Pour dressing over the salad and toss until the blend is covered with the vinaigrette. Refrigerate until ready to serve.
